hi -
I cannot add text to my slides, and I am having trouble editing.
There's no option in the Slideshow AV program to select 'Slidss-->Create New Slide Show' and no 'create Title Slide Option" - I'm having an awful time of it.

You're following instructions for the online slideshow creator, but you are using Slideroll Gallery AV. That's the source of your confusion.
To add text to a photo in Gallery AV, simply go to the "Create" tab and double-click on a photo. You'll see a text field at the bottom that you can use to add a text caption to the photo.
