f I cancel my subscription will the slideshows and gallery I created stay intact and not show the slideroll logo like the free ones or will it start looking like the free one?

If you cancel your subscription, your slideshows will stay intact, however the Slideroll logo will start to appear. For galleries, they will remain unchanged.
Any slideshows you downloaded will remain unchanged.
Keep in mind, when you revert to a free member, you can only edit the first 10 slideshows you made, and some of your photos may eventually be removed from the server.

If a pro member cancels their subscription, can they still edit and export the galleries that they created as pro members? IE, if I have a gallery with high res photos and there are more than the maximum number allowable to free members, would I still be able to edit and export updated versions of this gallery once my pro subscription ends?

For Gallery AV, all of your galleries will still be editable and exportable. However, the Slideroll logo will still appear.
For online slideshows, your photos will eventually be removed, so your slideshows will no longer be editable. They will continue to play normally, though, and the slideshows will not be affected by photos being removed. The Slideroll logo will also appear on the slideshows as well.

I paid for pro subscription 2 days a go, but it didn't allow me to do the things I was expecting,I just cancelled- do I still have to pay the $7? I wasn't able to make a useable slideshow.
